First, I will speak on some of the activities we have taken part in while on vacation. The most recent memory that comes to mind is riding ATV’s (Four-Wheelers) on a 3 hour ride up a mountain trail. We started off by meeting at the ATV place and made our way through town on the ATV’s. Eventually, we reached the access paths and started our up-hill climb to the mountain top. The slopes on this mountain path were incredibly terrifying to go down; while going down the hill the reality of the situation was that I had near zero control over how I was moving. When we got to the top of the mountain the view was incredible and terrifying at the same time; we saw the piercing blue water and crashing waves of the Pacific Ocean and the lush green mountains and jungle of Costa Rica at the same time. In Belize (two years ago), the most memorable experiences were of our snorkeling trips in Belize. We met up with our in-house guide and he took us out on his boat to the local coral reef, and when we got fairly deep in the water he gave us the snorkeling equipment, showed us how to get in, and dropped in. In Caribbean countries, seafood is a major part of their cuisine, and whether it is fish, conch, or even lobster it can be found largely in the food of these countries. In Belize one of our favorite foods to eat were conch fritters; conch fritters were bits of conch (the actual creatures that make and live in the conch shells that we have as decoration) surrounded by fried flour, and they were very fluffy and wonderful in taste. A very common dish in these primarily Spanish-speaking countries is ceviche; ceviche is a salad-like Latin American dish made with fresh raw fish that has been cured with lemon juice, spiced with chili peppers, and surrounded with multiple kinds of vegetables. In Belize we were granted the chance to try fresh King Crab straight from the local coral reef; during our spearfishing trip (I mentioned it earlier at the activities paragraph) among all the fish and conch we caught and found we had the incredible fortune to run across a King Crab in the Caribbean sea; later that day we had a very large and very wonderful meal of fish, conch fritters, ceviche, and the grand item: King Crab; the meal was actually large enough that everyone (including the onsite guide’s family) had enough to eat. Our last trip to Costa Rica we had fairly few new experiences with food, but we did get to have Tuna Sashimi and Seared Tuna; unfortunately I am not a huge fan of fish but, my parents loved it and
