Chitosan is a natural linear amino polysaccharide gained from chitin which is, after cellulose, the second more common biopolymer on earth. Chitin is the primary component in the shells of crustaceans such as shrimp, crab, and lobster. Chitin is present in crayfish, insects, and vegetal species mainly in the walls of fungi. These species require nitrogen for nutritional cycle. Chitin has been sourced from different originate and its composition shown in table 2.1 (synowie). Small quantity of chitosan is also found in some fungi but commercial production through alkaline deacetylation of chitin.

In which α-chitin is the most abundant polysaccharide among other forms (Khoushab). Chitosan has become the preferred material than chitin as it has more reactive groups. Chitin is a natural product, a combination of 2-amino-2-deoksi-Dglycopyranose connected with ß linkage. It was demonstrated that chitosan has a great potential in many application in various industry as it is potential source derived from Crayfish, molluscs, insects and fungi (around 100 milliards tons of chitin).
