Describe the Charmat Process
Bulk or Tank method for sparkling wine production. Sugar and yeast is added to the still wine and a secondary fermentation takes place under pressure. The sparkling wine is then bottled under pressure.
Describe the Transversage method
Aka transfer method. Sparkling wines are made using the traditional method in standard 750 mL bottles. The wines are then drained and filtered, transferred to different bottles and bottled under pressure. Most commonly used for quarter and large format bottle sizes.
