Food Allergies are on the rise around the world today, especially among children. This is a major problem for families, schools, and hospitals when dealing with children who have food allergies, some of which can be life threatening. Since this is such a serious problem genetically modified foods (GMOs) should be a concern for those whom or don’t suffer from food allergies, since they are not tested, regulated or required to be labeled (organic consumer), this is why food allergies are on the rise today. My intended audience in my English class may have severe food allergies, and surely some of them have family members with food allergies. It’s a food that triggers the bodys immune sytem. The reaction can be mild for some people but to others it can be a deadly reaction that type of reaction is called Anaphylaxis; is a serious allergic reaction that can rapidly onset the body and may cause death (Wikipedia). The first time eat t0he upsetting food, your immune system responds by creating specific disease-fighting antibodies called immunoglobulin. When you eat the food again, the immunoglobulin antibodies spring into action, by discharging ample amounts of histamine in an effort to banish the "foreign trespasser" from your body. Histamine is a powerful chemical that can affect the respiratory system, digestive tract, skin or cardiovascular system. (http://www.webmd.com/allergies/food-allergies) According to the NIAID, which stands for; “The National Institute of Allergy and Infectious Diseases” During an allergic reaction, the immune system responds to a normaly harmless substance as if it were a threat. Ninety percent of allergic reactions that occur in the United States come from eight foods which are milk, eggs, penuts, tree nuts, wheat, soy, fish and shellfish (http://www.geneticliteracyproject.org/2014/04/16/are-gmos-causing-an-increase-in-allergies/).. So how does this work? When someone has a food allergy, their immune sytem makes a type of antibody called immunoglobulinE or IgE as mention above. This class of antibody binds to immune cells called mast cells and basophils that circulate throughout the body. When a person is exposed to a food allergen it attaches to the IgE antibodies. This binding signals the immune cells to lease histamine and other chemicals, that cause allergey symtoms, such as swelling in some body parts, hives and shortness of breath, because mast cells and basophils rapidly realse these chemicals, an allergic reaction typically occurs within thirty minutes or less after exposure. The most serve kind of reaction is called anaphylaxis as mention before. Anaphylaxis can cause a sudden drop in blood pressure, trouble breathing, dizziness and possibly death. People with food allergens and poorly controlled asthma are more susceptible to serve reactions. An anaphylaxis episode must be treated with a hormone called “Epineohine”, which maintains blood pressure and opens up the airways. To deal with accidental exposures, people dignosed with food allergy should be prescribed a medical device called an autoinjector that delivers a single dose of Epinephinhe into the thigh muscle. Anathistamines alone are not effective treatment for anaphylaxis. There is no cure for food allergies. The best way to manage the condition is to avoid the allergenic food, read food lables carefully, wash hands and house hold surfaces and always carry an epinephrine autoinjector. If you accidently are exposed to a food allergen, seek medical help immedialey. Sometimes to a food is not an allergy at all like wise it’s a food intolerance. According to the Australian NSW Food Authority, Food tolerance is when there is a difficluity digesting certaing causing constipation, bloating, diarrhea, headaches, cough, Migraines, runny nose, feeling under the weather and hives. The National Insittute of Allergey and Infectious Diseases, or NIAID, conducts and supports research to better understand, prevent and treat food allergy. In 2010, an expert panel sponerd by NIAID issued guidelines to assit healthcare professionals in diagnosing and managing the disease. These guidelines can be found on the NIAID website. This research topic appeals to me because, I am allergic to tree nuts and still continuing to discover more food allergies that I am immune system does not
