I feel the same way you do. Paraphrasing is my challenge when writing. I have decided to read my information twice and pick out the key words in the information I am reviewing to help me compose my thoughts and just summarize the important items. Also, making sure I am citing correctly after I have summarized the information can be an additional challenge but I think I am getting better at that.

I too find paraphrasing the hardest form of plagiarism to avoid. Trying to summarize what someone else said, who said it very intelligently is a challenge. I found it easier if I pick out the key words in the information I am trying to summarize and then put my thoughts together. Making sure you cite the work properly is key.
