To comply with the British theme, I have chosen to make pumpkin loaf. The health value of this loaf wasn’t overly great however, there are elements of value in there such as the 650g of pumpkin. There was also a lot of brown sugar and butter. Pumpkin loaf is only a ‘sometimes’ food that could be eaten at a morning tea or as a snack.
When making the pumpkin loaf, I used techniques such as folding, cubing, boiling and beating. The pumpkin was cut into small cubes and placed on a microwave safe plate with a small amount water on the plate. It was then covered with cling wrap and put in the microwave for 3-4 minutes. This, however, didn’t cook the pumpkin all the way through so it was then placed in a glass bowl, covered with water and then cooked for another 4 minutes till they were tender. The pumpkin was placed in the food processer and then folded into the butter, sugar and eggs mixture. The flour was sifted over the top and then folded into the pumpkin batter. They are a popular British dish that are enjoyed by many in England and even Australia. Wholemeal bread, apples, rhubarb and hazelnuts are all health components of the snacks. Unfortunately, there is a fair amount of sugar that is used that may contradict the fruit content. However, it is still considered a healthy dish.
When making the charlottes, I found that it was easier to remove the crust before I rolled it not after. Also, if the bread had been heated up prior to rolling it, it was easier to flatten to the correct size. The fruit was cooking while I prepared the bread and the muffin trays so that I could save time. I used techniques such as arranging of awkward shapes, cutting, slicing, simmering and blending.
Next time, I would use larger, deeper muffin trays so that the bread would fit more evenly and better. I would also work out how exactly to put the bread slices in the muffin trays as most of mine turned out different as I couldn’t quite find the right way to put them in. The charlottes weren’t browning on top enough so I had to turn the temperature up or it could have been put under the grill for a short
