Agar is a gelatinous substance used as an alternative to gelatin. It is produced from different seaweeds. Agar is mostly used in desserts and a thickener for soups but also used as a solid base to grow cultures on its surface. Agar was first used in microbiology in 1882 as it was discovered that it was a more useful solidifying substance than gelatin. Agar melts at 85 degrees celsius and solidifying at around 32-40 degree celsius. Most scientific experiments require incubations at temperatures near 37 degrees celsius, therefore agar is more useful that other substances.
