The human body is composed of many different enzymes that all have a different effect on the way the body functions. Enzymes are organic catalysts for macromolecules that accelerate the rate of chemical reactions. For example, amylase is an enzyme that contributes to the digestion of carbohydrates. The effect of this enzyme can vary based on its concentration. Higher concentrations of amylase have a greater effect on starch than lower concentrations. Amylase initiates the first step in the assimilation of starch (Butterworth et al. 2011). A solution that contains a low starch content, but a high amylase content, prevents the starch from reaching a level of saturation. This results in a significantly faster reaction, due to the increased rate
