Part I
Chapter 1: This chapter discusses how our food industry has changed of over the course of the years, and how we are now more concerned about nutrients than the foods we eat. He discusses how the science in our food has created food our ancestors wouldn’t recognize, and it is due to bad policies pushed by lobbyists.

They were had high cholesterol and were overweight and developed type 2 diabetes. During the 7 week study they lowered their cholesterol, lost weight and were healthy.
Chapter 2: This chapter discusses how the western diet has brought on cancer and other health problems and no one wants to talk about it being linked to that. Those health problems are so common now and no one believes there is a cure for these now modern diseases.
Chapter 3: This chapter talks about the progression of eating whole foods to processed/refined foods that contain sugars, fats and salts. He also talks about how the western diet has come about quickly and we are eating a lot of corn in addition to our processed foods.
