This TV show, The Restaurant Impossible, provided hand full of examples how disgusting food place can be, if the owner and staff doesn’t follow sanitation norms. I’ve seen findings of mold inside the refrigerator and under the sink, because those pieces of equipment haven’t been cleaned properly. Dirty dining room tables and floor - those violations may lead to food cross contamination. It’s can be easily prevented by simple wiping down the table with some sort of cleaner, and sweeping and mopping the flow with soapy water. Their next findings were way worst! Cockroaches were found everywhere, mainly because a lot of food leftovers under kitchen equipment. Two things could be done to prevent it: store food properly and detailed clean-up at workstations. Starting from outside garbage area covered with trash and leftovers that attracted insects and rats. That’s really easily could be fixed by keeping containers leads closed, area around containers swept, garbage bags tight. Instead this facility has been shutdown for rats. Another thing that shows how unsafe that place is the food temperature checks at the buffet. The manager stated that they check those temperatures only 4 times a day, instead every time when food tray was changed. Also, violations in the fridge temperatures were found, such as meat and dairy were kept at temperatures above 41F. Simple temperature control in refrigerating unit could solve that problem. Overall, this particular buffet sounds like a nest of food safety violations, and I’m note sure why they still open for business.
I usually choose a new restaurant by the reviews in the internet, but I think that after learning about food safety I will start checking the inspection reports before dine in the new place. I don’t want to get food poison and pay for it from my
